Pan Seared Scallops
You can do a lot of lovely and fancy things with scallops, but this has got to be the quickes and easiest way to enjoy your scallops. All you need is a heavy bottom pan or skillet, salt and pepper and a knob of butter. And of course some fresh Isle of Mull Scallops.
First session the scallops with a generous amount of salt and pepper.
The heat up the pan so it is extremely hot, drop in the butter and work it around the pan.
Next slowly place each scallop around the edge of the pan in a clock wise direction.
E.G if you have 12 Scallops place the first one at 1 o'clock then 2 o'clock and so on, until you come round to 12. It will then be time to turn the first scallop over that you placed at 1 o'clock.
The scallops should then have a nice seared golden colour to them.
Finally swirl the pan around to coat the scallops with butter and serve. Garnish with chives, basil, salsa or a crispy salad.
